项目摘要

合宿や練習などで持久的運動が1日に複数回実施される場合，運動のエネルギー源であるグリコーゲンの急速回復が必要となる．応募者はこれまでブドウ糖と乳化した脂質で特製したアイスクリームの摂取がインスリン分泌の亢進に伴う筋グリコーゲンの急速回復に与える影響を研究してきた（令和元年度科研費研究活動スタート支援採択課題，実験遂行中）．当研究にて明らかとなった知見と課題として，運動直後のブドウ糖特製アイスクリームの摂取は，インスリン分泌を亢進させたものの，筋グリコーゲンの回復の有効性までは見出せず，食品の栄養組成の検討が必要と考えられた．加えて，体内のグリコーゲンの回復量を評価するためには，筋肉に加えて肝臓のグリコーゲンを定量する必要性が伺えた．本研究は，運動直後のグリコーゲンの急速回復のための有効な栄養摂取方法を明らかとするため，1.グリコーゲンをより回復させる食品の栄養組成を明らかとする，2.急速回復時の筋肉および肝臓におけるグリコーゲンの動態を明らかとする，3. グリコーゲン回復後の運動パフォーマンスに及ぼす影響を検討することを目的とする．予備実験の実施により，栄養組成の異なるアイスクリームの調整が完了した．また，筋グリコーゲンの急速回復に必要な時間の検証も完了しているため，次年度に本実験を実施する予定である．
