研究内容は大きく分けて二つであった。一つ目は、パラグアイ共和国首都アスンシオンと農村地域であるピラポ市において、2015年から2016年にかけて実施した約790名の食物摂取頻度調査票の比較分析を行った。ピラポ市では、キャッサバ芋を栽培していることもあり、一日に一食はキャッサバ芋料理が食されていた。さらに、油を多く含む小麦粉料理（レビロ、トルティージャ）もアスンシオンに比べて多く食されていた。一方、アスンシオンの主な主食はパンなどの小麦粉料理であり、ピラポ市に比べて加工食品やファーストフードの摂取頻度が有意に高かった。以上のことから、都市部と農村部では顕著な食生活の違いが確認された。研究成果は、国際家政学会大会にて口頭発表を行った。二つ目の研究は、ピラポ市で同時期に実施した433名分の食事秤量記録の質的分析である。出現した1,223の料理を、①炭水化物を多く含む料理、②主菜（たんぱく質を多く含む料理）、③炭水化物、たんぱく質両方を含む混合料理、④その他の料理の４タイプに分け、一食の料理の組み合わせパターンと、その違いによる栄養素等摂取量の違いについて比較した。対象者の全食中約40％は、炭水化物を多く含む料理を2つ以上組み合わせて食されており、それらの食事は、炭水化物料理を一品しか含まない食事に比べて、エネルギー、脂質、食塩の摂取量が有意に多かった（ただし男性の脂質摂取量のみ有意ではなかった）。この研究成果は、国際学術雑誌（査読付き）に掲載された。日本や国外においても炭水化物料理の重ね食べは、肥満や糖尿病の要因になりうると課題視されているものの、エビデンスにもとづいた先行研究はほとんど確認できていない。本研究の成果は、パラグアイ共和国のみならず、国際的にも料理の組み合わせの重要性を示唆するものと考える。

The content of the study is divided into two parts. A comparative analysis of the frequency survey of about 790 food items in the capital of the Republic from 2015 to 2016 was conducted. The city is full of food and drink. Today, the oil contains more wheat flour than the oil. The main staple food is wheat flour. The frequency of selection is intentionally higher than that of processed food. The above remarks are confirmed by the Ministry of Urban Affairs and the Ministry of Rural Affairs. The results of the study were presented orally at the International Society for Home Economics Conference. Second, the research on the quality of 433 food weighing records in the same period was carried out. There are 1,223 dishes, 1 charcoal hydrate, many kinds of dishes, 2 main dishes, 3 charcoal hydrate, many kinds of dishes, 4 kinds of dishes, 4 kinds of dishes, 1 kind of dishes, 3 kinds of dishes, 4 kinds of dishes, 4 kinds of dishes About 40% of the total food of the target group contains more than 2 kinds of food, including food, charcoal and water.
