障害児者が自分のできることを最大限発揮し、幸福感の中で自立した生活を送るために、保健・医療・福祉・教育など様々な支援体制の強化が進められている。障害児者には、過剰栄養（肥満）や低栄養（やせ）などの栄養障害の存在が知られてはいるものの、栄養ケア体制は整っておらず、その課題も明らかとなっていない。障害児の肥満は生活習慣病、やせは発育・発達障害のリスクを上げ、その後の成長や健康状態、生活に大きく影響することから、一人一人に適切な栄養ケアを可能とする体制整備が急務となっている。本研究は、学童期の障害児が集う特別支援学校において、栄養専門職である栄養教諭が中心となった支援が可能となるよう、障害児の栄養ケア計画策定上の課題を明確化し、食事提供や食事支援を可能とする支援体制について提案する。すなわち、栄養教諭を特別支援教育における栄養ケアの中核とした個別のケア体制の構築を目指す。本年度は「特別支援学校の栄養管理体制の実態調査」に向けた調査票作成と「特別支援教育における栄養管理の諸外国調査」として、国内の特別支援教育における食育の文献的検討及び諸外国における障害児への栄養教育介入効果に関する文献収集を実施した。国内の特別支援教育における食育は、栄養専門職と他職種が協働して実施しており、障害児個々に合わせた教育の一環となっていた。さらに、食育は食事時間の問題行動の改善、苦手な食べ物の克服、他児との良好な関係構築に加え、本人のやる気や自信、達成感を引き出すことに繋がっていた。今後、諸外国における障害児への栄養教育・栄養ケアについて情報を精査し、国内の実態に合わせた特別支援教育における栄養ケア体制の検討を行う。
