【背景及び目的】食に対する教育(食育)に関連した指導書は、1)栄養学的視点、2)衛生面、3)食文化等に注目した内容が多い。しかし加工食品に使用されている添加物やその用途について指導している教材は少ない。そこで本研究では、食品表示法に基づき、(1)実際に使用されているにもかかわらず、食品の表示には明確に示されていない成分について指導する。さらに加工食品中心の家庭環境を改善させる課題として、(2)家事(炊事)を通した親子の「きずなの形成」を推進していく。本研究では、安心・安全な食事作りの大切さを教え、「炊事を手伝わせる課題」を休日に与える等、家庭環境の改善を推進する。【研究成果】(1) 家庭科の授業の中で、特に食品表示に関する項目に時間をかけ、高校生に指導した。食品関係のエキスパートを講師(CO・OPとやま、総合企画グループ茨木淳子総括補佐)として招き、実際に食品を開発した人のみが知る添加物の話や、食品表示の抜け穴等について講演をしていただき、安全で栄養のバランスのよい手作りの食事の大切さを強調した。なお、ほとんど全ての生徒(95%)は、講師の授業を理解して、食品表示について関心をもったと回答していた。(2) 次に授業を行った後に、生徒に家事労働(炊事)をするという課題を与えた。特に家庭科の調理実習で教えたレシピに基づき、栄養のバランスの整った食事を作り、親子のコミュニケーションの場を提供し、家庭環境の改善を促した。さらにアンケート調査により、炊事を金額で評価させた。その結果、母親の3食分の炊事労働は平均4,506円であり、生徒の金額(4,281円)よりも高かった。生徒は炊事の大変さを認識して、母親の家事労働の価値を高く評価したと思われる。家事労働には「家族のきずな」を深める効果があり(鈴木昌代、関西文化研究叢書2008年)、アンケート調査により今回も「家族のきずな」は深まっていた。今後このような実践的な課題を通して、食育と家庭教育を指導する予定である。

[Background and Purpose] There are many contents concerning food education (food education), such as 1) the viewpoint of nutrition, 2) hygiene, 3) food culture, etc. The use of additives in processed foods and the use of other materials are not enough. (2)After the class, the students started to work. Special attention is paid to the improvement of the family environment through the provision of basic education, maintenance and food for children. The amount of money spent in the survey was estimated at $10,000. The average amount of food for mothers is 4,506 yen, and the amount of food for students is 4,281 yen. The students 'cooking skills are greatly appreciated, and the mothers' household skills are highly valued. Family history is the result of "family history"(Suzuki Masayo, Kansai Cultural Studies Series, 2008), and the result of "family history" is the result of "family history"(2008).
