2021年度繰り越しによる研究成果は、以下のとおりである。1．マルシェは、都市農村交流の新たな形態として、各地で関心が高まっている。そこで、ここでは従来あまり分析事例のない、都市型マルシェ出品者の売上満足度とその要因について、東京都内で開催されるマルシェ出品者への対面でのアンケート調査結果を基に、出品者の売上満足度に作用する要因をロジットモデルの計測結果から解析した結果、リピータの存在が最も統計的に有意に作用し限界効果も最も大きかった。回答者の属性では、大学卒以上、2人以上で経営、そして食品を販売する20代から30代で、満足度が高いことが判明した。このことから、マルシェへの出品経験を重ねる様な支援策の工夫の検討が有効といえる。2．フードバンク運営者の満足度とその要因について、全国の運営者に関するオンラインアンケート調査結果を基に、ロジットモデルの計測結果からその要因の解析を行った結果、安定した食品の提供元、行政と連携した活動を行っていること、所在地域が東日本であることなど、地域的な偏りもみられた。以上から、フードバンクと利用者との間に仲介組織を検討することも今後必要となる可能性がある。3．都市居住者の貧困と交流の対応として関心が高まっているがその運営者の満足度に関する分析がなされていないことから、こども食堂運営者の意識とその満足度とその要因について、千葉県を対象とした聞き取り調査結果を基に、プロビットモデルによる解析を行った結果、都市出身者であることや運営者の時間的・精神的余裕など、運営者の状況に応じた無理のない運営が運営者の満足度を高めることが判明した。このことから、力を入れすぎず無理をせずに、現状に見合った運営計画の作成が重要と考える。
