Conjugated trienoic fatty acids were fairy unstable in bulk phase, however cathechin was effective as an atioxidant. Dietary conjugated trienoic and highly unsaturated fatty acids did not induce lipid peroxidation in the tissues of rat or hen. Dietary conjugated fatty acids were not accumulated in the tissues but retarded the deposition of fat. Alternatively conjugate linoleic acid was observed in the tissue lipids. Conjugated trienoic acids showed a remakable cytotoxic activity on the cultured cancer cell lines. Dietary conjugated trienoic acids inhibited the azoxymethane-induced colonic aberrant crypt foci in rat. Chemopreventive activity of conjugated trienoic acid was suggested. A polyunsaturated fatty acid isomerase was isolated from a red alga Ptilota pectinata. The isomerase converted eicosapentaenoic acid and arachidonic acid to conjugated trienoic acids which were highly toxic to HepG2 cells.
