项目摘要

カンボジアでは、ポル・ポト政権下における大虐殺や焚書政策によって多くの歴史的資料が失われ、伝統食品についても名称・原材料・製造方法・成分などの記録が存在しない。近年では、市場における伝統食品の販売品目数に減少が見られ、現存する伝統食品が未記録のまま人知れず消滅してしまう危機に直面している。その要因として、ライフスタイルや食生活の変化、食の安全性への意識の高まりなどが考えられるが、伝統食品の記録が存在しないことが障壁となり、消滅の危機を脱する方策を見いだすための研究には至っていない。本研究は、研究代表者を始めとする日本人研究者がカンボジア王立農業大学に出向き、同大学の研究チームと共同で5つの研究を実施することで、フィールド調査によりカンボジアの伝統食品を「発掘」し、その衰退の要因と機能性成分・効能を解明する。また、見いだされた伝統食品の消費活性化や新たな活路の開拓に向けた実践研究を行い、その効果や実用性について検証・評価することで、伝統食品の維持・継承モデルを構築することを目的としている。2022年度は、研究1）に関する探索的なフィールド調査を実施し、マーケットなどで販売されている各食品について呼称・原材料・食し方・食す機会・口承効能や、生産・販売・消費の実態と課題等に関する半構造化インタビューを実施した。また同調査にて確認された一部の食品について、原材料の成分分析を実施し、国際学会にて発表した。

Data on the history of mass killings and book burning under the government's control are missing, and records on the names, raw materials, production methods, and ingredients of traditional foods exist. In recent years, the number of traditional food products sold in the market has decreased, and the existing traditional food products have not been recorded and eliminated. The main reasons for this are the high level of awareness of food safety and the existence of barriers to food safety. This study was conducted jointly by Japanese researchers and researchers from the Royal Agricultural University of Japan. The results of this study indicate that traditional foods are "discovered" and that the main causes of decline and functional components can be explained. The purpose of this study is to investigate and evaluate the effectiveness of traditional food consumption activation and development of new ways of living. In 2022, we will conduct research on the implementation of semi-structured research on food products, raw materials, food methods, food opportunities, oral energy support, production, sales, consumption and other related issues. Co-investigation was conducted to confirm the implementation of a number of food tests, component analysis of raw materials, and international society reports.
