项目摘要

近年, 山菜は自然食品の最たるものとして需要が増大している. 本研究は落葉広葉樹林帯(ブナ帯)で広範にみられる山菜の採取および山菜の促成栽培の実態を解明し, それに風土論的考察を加えることを目的としたものである.山菜の採取は, 伝統的にブナ帯の山村, とくに多雪地の山村で行われてきたが, 山菜の促成栽培はブナ帯の少雪地で多い. 山菜の促成栽培は, フキ, ワラビ, タラノメ, コゴミ等が行われるが, タラノメの促成栽培が典型であろう.本来, タラノメは春にとるものであるが, 促成栽培はそれを夏冬の12〜3月に採取するものをいう. 当初, 山からタラノキを切り, それを植木として温室内で栽培したものであるが, 促成栽培の普及につれて, タラノキを桑のように栽培するのがみられるようになった. 現在, タラノメのキの落葉後, 台木を切り, 一芽ごとに10〜15cmに切ったものを温室内のオガクズ床に伏せこみ, 12月下旬〜3月下旬にタラノメが7〜8cmに仲が〓ように栽培している.このタラノメの促成栽培は, ブナ帯で冬季出稼を止めさせるまでになったが, 栽培技術が容易なこと, ビニールハウスを転用できることなどで普及した. 当初, 〓境期の山菜としてタラノメは高価に販売されたが, その栽培の普及とともに価格が低下した.結論的にいえば, タラノメの促成栽培は, 生産基盤の脱弱性をもった風土産業といえよう.なお, 研究結果の詳細については, 別さつの研究成果報告書を参照されたい.
