项目摘要

初年度は牛肉、本年度は牛乳、豚肉、鶏肉、来年度は鶏卵の生産・流通の段階別価格形成分析を行なう計画で、本年度の三品目についての概要を述べると次のとおりである。(1)飲用牛乳流通を歴史的に整理すると、30年代の宅配期、40年代後半のス-パ-への変化期、50年代以降のス-パ-販売期に区分される。したがって段階別価格構成は40年代までは明確にわかるのはこの期が「乳価交渉時代」であるためである。近年のス-パ-販売期には牛乳そのものの差別商品化、目玉(客寄せ)商品化によって小売価格は多様であるが配乳段階コストを大巾に狭め、その分、農家取分、工場取分を高めた。一方韓国と比較したが、同国は日本の宅配時代の様相を基している。(2)豚肉需要は、加工・業務用が55%を占め、6年後には65%を占めるようになる。牛肉輸入や豚肉輸入量の増大によって大きく転換されよう。卸売市場出荷が減少し、加工メ-カ-や量販店需要が増大する。豚肉の段階を素畜、成豚、枝肉、加工、小売商の段階に分けるとき、素豚、24,000円から小売段階の55,719円となる。すなわち、小売段階でのマ-ジン形成は大きい。一方、台湾産の豚肉はほゞ半減された価格形成であるが、湾着のCIF価格でみると、わが国加工業者、卸売段階の59%と低い。(3)ブロイラ-需要は、加工・業務用が65%を占め、家庭購入は35%である。また旧産地と新産地の分化が大きく、前者の停滞、後者の発展、また輸入ブロイラ-の増大となって現れている。ブロイラ-1羽当たり段階別価格では農家生産段階、371円、加工処理段階、514円、卸売、528円、小売段階、1,326円となる。これは生産段階の3.6倍である。一方、タイ産ブロイラ-はCIF価格で331円となり、わが国卸売価格の63%となる。今後、鶏卵を加え、流通費率、附加価値形成、マ-ジン率、農家手取率、小売価格対生産者価格率などを追求する予定である。
