The cell with a functional surface protein such as cellulose-binding protein and glucoamylase is useful to the immobilized enzyme and food industry. Geotrichum sp. cell, M111 has an ability to accelerate the aggregation of cellulose fiber. We investigated the growth characteristics of M111 cells and the change of the aggregation ability of cellulose powder of vacuum and spray dried M111 cells. The following results were obtained.1)The effects of temperature, pH, agitation speed, and the aeration velocity on the growth characteristics of M11 cells were investigated. The growth rate of M11 cells was markedly affected by the agitation speed, but was independent of the flow rate of air. The optimum temperature and pH for growth were 27 oC and 5, respectively.2)The aggregation ability of cellulose powder with a yeast-like cell of M111 was characterized by the measurement of the aggregation-height in a glass micro-tube. The optimum pH and temperature of the aggregation were pH 4-5 and below 50 degree. The denaturation of M111 cell by heating could be well correlated with a first order denaturation kinetics. The activation energy of denaturation was 213kJ/mol. The aggregation was inhibited with surfactants such as SDS or STS.3)M111 cells were dried at 80 oC under vacuum. The cellulose aggregation ability of the vacuum dried cells did not change and maintained the similar level to the original cells.4)Spray drying method was applied to make a dried cell of M111. The inlet and the outlet temperature of air were 150 oC and 79oC, respectively. In this case, the cellulose aggregation ability of the spray-dried cells was decreased to 80% of the original ability. This implied that the decrease of the cellulose binding ability resulted from the shear stress at atomization.
