目的:人は一生自分の歯で咀嚼が可能で好きなものを何でも食べられたとすれば,身体的にも精神的にも幸福な人生を送ることができると考えられる.そこで食の好みという観点より残存歯数との関係を明らかとすることにより,何本の歯が残存すれば好きなものをいくらでも食べることができるのかを調査することを目的とした.この年度での研究目的は,食品の嗜好性と残存歯数との関係を評価するための食品アンケート調査票を完成させその精度の確認を行うことであった.方法:食品アンケート調査票を作成するにあたり,被験食品の咀嚼に対する難易度をバランスよく配置させる必要があるため,初めにプレアンケート調査票の作成を行った.まず料理のメニュー226種類を選択した.その内容は一般的に日本人のほとんどが知っているもの,子供から高齢者まで隔たりなく食す習慣のあるものとし,郷土料理等の地方食や特異性のあるメニューは除外した.なお,調査票はVASを応用し,Ommを豆腐の味噌汁,100mmをするめいかと設定し,さらに得られるデータに客観性を持たせ,各メニュー同士の相対評価とするために負の値の領域と100mmを越える領域にもスケールを設定した.その後,プレアンケート調査票を用いて79人の20歳代健常有歯顎者に対して各料理への咀嚼難易度の意識調査を行った.このプレアンケートの結果から得られたデータで,昨年度はクラスター分析を用いて客観的クラス分けを行い,48種類の料理メニューを選択することができた.本年度は,さらに48種類のメニューのデータ分布を確認し,正規性の検定後,適正と思われるメニューの選択を行った.結果:クラスター分析より選択された48種類より10種類が篩い落とされ,最終的に38種類の料理メニューによるアンケート調査票が完成した.結論:食品の嗜好性と残存歯数との関係を評価するための食品アンケート調査票を完成することができた.
