家畜・家禽は、外部刺激によるストレス条件下では生体構成成分の過酸化が生じ、生産性が低下する。本研究では、暑熱ストレス時においても「ラジカルフリーの健康肉」を設計するため栄養制御による飼養技術基盤を構築した。すなわち、暑熱ストレス下では02・-産生の増加が、脱共役タンパク質低下ならびに基質酸化の上昇→膜電位の上昇→02・-産生増大との「カスケード」が存在するが、オリ-ブ油の給与によりこの流れを負に制御することに成功した。
