本研究は, ブドウ果実の成熟過程に起こる急速な軟化現象を細胞壁構造と細胞壁分解酵素遺伝子の発現から明らかにしようと試みたものである.その結果, ブドウ果実の内部の組織の違いにより軟化過程の速度もしくは構造変化が異なること, ベレゾーン期の急速な軟化は細胞壁のヘミセルロース, 特にキシログルカンの低分子化によって起こるであることが明らかとなった.今後組換えタンパクなどを用いて詳細に調査する必要がある.
