The Production of Japanese Agar and Gelatin in Edo Period

本研究以琼脂和明胶的生产地伊豆地区和北方大坂地区为研究对象，考察了德川时代琼脂和明胶的生产结构。在伊豆，琼脂的购买被称为urauke的渔场使用所垄断，并且由于Kishu封建家族的介入，琼脂的原材料和价格上涨。由于洋菜价格的显著上涨抑制了洋菜生产者同伴的经营，而各封建宗族又加强了洋菜的垄断制度，导致了直产中心那些村庄之间的对立和村内农民之间的冲突。

I took up Izu area and northern Osaka area at the agar and gelatin production place, and this study examined production structure of agar and gelatin in Tokugawa Era. The purchase of the agar in Izu was monopolized by fishing ground usage called urauke, and raw materials and a price of the agar that it was rose because Kishu feudal clan intervened there. Because the remarkable rise of the agar price suppresses the management of the agar production person companion, and each feudal clan strengthened a monopoly system of the agar again, the opposition between the villages of the straight production center and the conflict between the farmers in the village occurred.
