项目摘要

前年度の研究成果を踏まえ、中部地方を中心に蔵元へのヒアリング調査を行った。また、丹波杜氏記念館へのヒアリング調査も併せて行った。研究者グループが全員集合した研究会を、神戸大学と大阪府立大学中之島キャンパスで計2回行った。中之島キャンパスの研究会では、静岡県立大学の尹大栄准教授を研究会に招聘し、静岡県における酒造りについて研究発表をお願いした。このような研究活動の結果、まず杜氏と蔵元の関係の地域ごとの違いが明らかになった。桶買いが主な製造方法となった灘においては、主な杜氏供給元であった丹波は徐々に杜氏の数を減らして行き、平均年齢も高くなっていることがわかった。また、蔵元へのヒアリング調査からは、桶売り依存度が高い蔵元は、衰退する傾向があることも明らかになった。一方、蔵元の地域にこだわらない杜氏供給によって、南部杜氏は杜氏の数をあまり減らしておらず、若い杜氏も育ちつつあることがわかった。また、杜氏も、複数の蔵元を経験しつつ、ある蔵元での在籍期間が長い方が品評会で高い評価を受けることが明らかになった。その一方で、独自の酵母や発酵技術の開発により、杜氏を用いない蔵元も出現しつつあることが明らかになった。前述の尹准教授による静岡における酒造産業の研究からは、近年独自の酒造りによって品評会で高い評価を受けたり、国内での売上を伸ばしつつある蔵元には、このような蔵元が多いことも示唆された。このように、日本酒産業全体の衰退の中で、伝統的な事業システムである杜氏と蔵元の関係は、近年変貌を遂げつつあり、このような変化が次世代の酒造りに対しても、杜氏への依存度が低い事業システムへの圧力となりうることが予想される。
