Studies on phase inversions of particle-stabilized dispersed systems of air and liquids

The phase inversion of dispersed systems consisting of air and liquids, that are stabilized by particulate materials adsorbed at air/liquid interfaces, has been studied. It has been shown that the relatively liquid-philic particles stabilize air-in-liquid materials (foams), while the relatively liquid-phobic particles form liquid-in-air materials such as dry liquids and liquid marbles. Using particles with known contact angles that the particles make at air/liquid surfaces, the stability of liquid marbles against coalescence were investigated, showing the stability is determined by the contact angle and liquid viscosity. Furthermore, powdered o/w emulsions were prepared by aerating o/w emulsions in the presence of hydrophobic particles.
