项目摘要

本研究の目的は、先に実施した「日本古代菓子の実態解明と再現活用の研究」（19K02356）において実態を明らかにして再現できた古代菓子が、どのような場でどのように提供され、楽しまれたかを明らかにすることである。すなわち、①日本古代菓子の飲食法・供膳様式の解明、②日本古代菓子の再現と日本全国での甘葛煎研究、③甘葛煎の味覚再現、甘葛煎を使用した古代菓子の再現、④日本古代菓子の供膳様式を含めた活用と普及、である。①は具体的に儀式（宗教儀式を含む）、行事、宴会、供膳具から検討していく。②～④は奈良や各地の地場産業にも成りうる。現代に再現した古代菓子を古代スイーツとして、日本各地でそれぞれの古代スイーツを創造し地域活性に役立てられることも目的である。本年は次のことを行った。①に関して11世紀に岩手県北上川中流域を支配した安倍氏の厨川柵に近い盛岡市赤袰（あかもたい）遺跡出土の土器様式について調査した。器台と椀がセットになることを確認した。③の古代甘味料の甘葛煎の味覚再現については、奈良県農業研究開発センターの協力を得て、詳しい分析と試作、官能試験を行った。甘葛煎を使った古代菓子の再現では、芋粥を作った。すなわち『今昔物語集』が記す調理法で、煮詰める前のツタの樹液（ミセンという）に薄くスライスした大和芋を入れて軽く煮た。現在でも通用する美味しさであった。②④に関して、奈良時代の古代菓子の実態が明らかとなったため、奈良時代の菓子を古代スイーツとして再現レシピを作り、平城宮のイベントや、奈良市内のカフェでは古代スイーツアフタヌーンティーとして提供できた。
