本研究では、1840年代の詳細な食料・産業の項目記載のある『防長風土注進案』を基礎史料とし、歴史的史料、現在の山口県の食材生産、家庭料理などの資料を加えて事典として活用できるデータベースを作成する。その過程で、日本の食文化の継承と現在までの発展について考察し、それらを活用して食育・国際 理解教育に関する教材を提供し、地域貢献としての観光のためのコンテンツの開発を行う。2022年度は、大きく３つのテーマに関わる取組みを行った。１ 食料・産業について事典として活用ができるデータベースを作成（2022-2025年度）天保期長州藩の地誌である「防長風土注進案」の記載をもとに事典として使用できるデータベースを作製するための、基礎的資料の収集を行った。歴史的、民俗学、郷土料理との関係、地域性などの資料収集を行い、データベースの内容（食材名、学名、1840年代の生産量、現在の生産量、生産村の分布図）について検討した。２ 山口県におけるイギリス料理の受容と変容（2022～2024年度）幕末から現在までの食文化の変遷を考察するため、長州藩における幕末、江戸時代から明治期以後の山口県の資料の収集および、幕末から明治期にかけての欧米文化との接点があった地域や個人（和歌山、鹿児島など）の資料館において情報収集を行った。３ 幻の柑橘クネンボの検索と復活（2022～2024年度）山口県のクネンボについて、資料収集および情報収集を行った。また、山口県オリジナル柑橘についても検討を行った。
