本研究の目的は、近代化以前の食生活の解明のために、食料生産の記録および個別の事例から食生活を分析することである。食料生産の記録による方法として、「日向地誌」を碁礎資料として明治初期宮崎県の食生活の解明、および全国の統計資料である「明治10年全国農産表」を用いて、地誌を利用した食生活復元の可能性と限界を明らかにする。一方個別の事例からの分析としては、江戸時代末期から明治時代にかけて記録された「小梅日記」による食生活の復元と、江戸時代料理本のひとつである.「豆腐百珍」における食の特徴を明らかにする。これらの研究を通して、各方法論の可能性と限界を検討したいと考えでいる。本年度は、大きく2つのテーマに取り組んだ。まず第1に食料年産の記録からのアプローチとし、明治初期の宮崎県の地誌である「日向地誌」を基礎資料として食生活を明らかにするため、資料の検討、物産のデータベース化、食品名の同定、単位の換算について検討している。現在、データーベース化の作業の途中であり、食料の総生産量を算出、食料生産の地域性の検討、1人1日あたりの食料供給量と栄養素等供給量を算出、当時の食料と栄養状況を明らかにしていく予定である。また、第2に個別の事例からのアプローチとして、「小梅日記」をもとに、資料の検討、食品名のデータベース化を行った。「小梅日記」に記載された食品の頻度を明らかにし、食品の特徴および、食品の時代別・季節推移の分析を行っている。

The 1st annual food records, Miyazaki geographies in the early Meiji period, basic data, food life records, data review, product data review, food name identification, unit conversion, etc. Now, the process of food production is calculated, the regional food production is discussed, the food supply per person per day is calculated, and the food and nutrition status at that time is determined. In the second part, the individual case is divided into two parts: "Xiaomei Diary","Data Review" and "Food Name Review". "Xiaomei Diary" records the frequency of food, food characteristics, food age and seasonal change analysis.
