项目摘要

2021年度は、日本で用いられている既存の食事の質スコアのレビューと、食事の質スコアの作成と妥当性の確認を行った。レビューの結果、日本で用いられた食事の質スコアは27種類あった。日本で開発されたものについては、開発の根拠や過程がほとんど記載されておらず、その科学的妥当性を判断することが困難であった。また、海外で開発されたものについては、いくつかの修正を経て日本で用いられているスコアもあったものの、修正された理由は必ずしも明瞭ではなかった。そのため、本研究において食事の質スコアを開発する必要が示唆された。本研究では、食事の質スコアを開発するために、食事の質や食品、栄養素と疾病との関連を調べた研究や、日本人の食習慣を参照した。開発された食事の質スコアは、合計10項目で、多く摂取することが望ましい項目7項目（1.果物、2.野菜、3.全粒穀物、4.乳製品、5.ナッツ、6.豆類、7.魚）と、少なく摂取することが望ましい3項目（8.牛・豚などの赤肉、加工肉、9.砂糖の入った甘い飲み物、10.食塩）からなる。この食事の質スコアが高いほど、多くの栄養素の摂取量が適切であることを確認した。現在、これらの知見を国際誌に投稿するため、論文を執筆している。また、この食事の質スコアを測定するための簡易型質問票を作成するために現在までに存在する他国の類似の質問票のレビューを行った。簡易型質問票はおおむね完成している。
