The global aim of the project is the study of Scotch whisky by advanced spectroscopic and spectrometric techniques. The main technique will be Nuclear Magnetic Resonance Spectroscopy (NMR) with Mass Spectrometry being a complementary technique. The main project aims will be; developing a quantification method using NMR Spectroscopy for known whisky congeners (to allow for shorter analysis time). Investigate glycosidic compounds that are present in whisky. Investigate how the chemistry of whisky is changing over the maturation period, which in turn could allow for a forecasting model to be created with the possibility of allowing distilleries to predict the activity of their casks.
