Burnbrae farms have given priority to research work that will eventually lead to commercial production ofgelatin from egg shell membrane, which will provide value-addition to their poultry products. The first step ingelatin production is to extract collagen from the egg shell membrane. In the previous Engage grant, successfulextraction of collagen from egg shell membranes was achieved at a yield level that is compatible withcommercial production. However, in order to become a useful industrial product, the water-insoluble collagenmust be converted into water-soluble gelatin. Therefore, the aim of this proposal is to develop a simple processfor the production of gelatin from egg shell membrane collagen. Several protocols that include enzymatic andnon-enzymatic reactions will be tested for the breakdown of collagen into gelatin. The gelatin product will becharacterized mainly for functional properties (gelling, foaming and emulsification) that will demonstrate itsindustrial uses. The proposed work will lead to the development of a collagen conversion process that can bereadily scale-up at the pilot plant and commercial production levels. The optimized collagen conversionprocess will enhance the economic value of egg shell membranes that are currently considered as a low-valuewaste product.
