Saison Enterprises Ltd. has been producing grapes for more than 10 years and owns one of the largest vineyards in Vancouver Island. Because of the optimal location of its vineyard, Saison Enterprises Ltd. can normally grow high quality grapes that are sold to top wineries. Saison Enterprises Ltd. owns high-density vineyards and utilizes traditional and dry farming techniques to obtain concentrated flavours and high quality fruit. In Vancouver Island and Gulf Islands, Saison Enterprises Ltd. is a major player of the grape and wine industry.**Viticulture in Vancouver Island and the Gulf Islands faces numerous challenges. Among those challenges, slow ripening and a relatively short growing season are, in some seasons, serious constraints for aroma accumulation in grapes and for wine quality. Nevertheless, Vancouver Island and the Gulf Islands produce premium wines that are nationally recognised. The quality of white grapes and wines is strongly affected by the amount of aromatics that are accumulated in the grape tissues. Particularly, terpene compounds, that are accumulated during the late phases of ripening, determine the typical aroma of several grapes and wines such as Gewürztraminer. Recent experiments in vineyards have indicated that applying hormones at certain stages can accelerate ripening and/or improve the grape and wine aroma in aromatic varieties. However, very limited information is available for white grapes and particularly on how different hormones impact the berry ripening process and berry composition in these grapes. **In this project, we will explore the interactions of different hormones on terpene biosynthesis in a Gewürztraminer vineyard. We will investigate the effects of these treatments on berry growth and metabolism (sugars, acids, and terpenes). The goal of this project is to supply information to grape growers on the control of berry ripening and composition, and develop new viticultural strategies for modulating berry ripening and terpene accumulation in grapes grown in Vancouver Island and the Gulf Islands.
