Against the Grain Farms (AGF) located in Mountain, ON is a producer of non-GMO ancient cereal grains that have been hand selected from around the world, due to their nutritional properties, and planted in Ontario in order to supply locally grown heritage grains to Canadian health food and local markets. Barley is one of their most popular type of grains and is produced in many varieties that are high in fiber, anthocyanin, and proteins. With the successful establishment of these grains at their farm in Ontario, AGF is planning to launch a new product line to the Canadian health food market, barley-based beverages. The proposed research will be conducted under four phases, including: testing different barley varieties to evaluate product quality for the proposed formulations; development of three different flavour profiles; adjustment to formulations and processing conditions for optimal flavour, aroma, texture, and appearance; determining packaging options, and storage conditions; and shelf-life study for food safety and sensory quality. The research team at Conestoga College's Institute of Food Processing Technology (IFPT) will conduct experiments, analyze and interpret the data and prepare the final report including formulations, shelf life data, and recommendations for improvements of the product to Against the Grain Farms.
