Our ultimate goal is to provide, to Canadian honey producers and regulators, a diagnostic test for detecting fraudulent honey. This test will be able to be used to certify that honey sold in stores is truly honey produced by bees, as well as which region of the world the honey came from. The test will involve measuring a sample using two different analytical methods, then comparing the results of that analysis against a library of thousands of real, confirmed honey samples. The main three components of this test will be: a) the methods for collecting data on a honey sample, b) the library of honeys, and c) the software needed to compare the data to the library. At the end of this project the methods and the software will be usable by any appropriately equipped analytical laboratory.
