This subproject is one of many research subprojects utilizing the resources provided by a Center grant funded by NIH/NCRR. The subproject and investigator (PI) may have received primary funding from another NIH source, and thus could be represented in other CRISP entries. The institution listed is for the Center, which is not necessarily the institution for the investigator. The objective of this study is to isolate, identify and characterize endogenous components in Allium species, such as onion, garlic and green onion that possess biological activities relevant to cancer chemoprevention in humans. Determination of phase II enzyme inducing activity, and a set of selected antioxidant functions or physiological relevance will be used, respectively, as primary and secondary assays to direct the isolation and purification of bioactive principles from extracts of selected Allium vegetables. The identification of health-promoting phytochemicals in commonly consumed fruits vegetables, if they are ultimately shown to be efficacious in humans, will contribute to the effectiveness and sustainability of agriculture as well as encourage the public to make health-promoting food choices.
