项目摘要

味覚には遺伝的要因と環境的要因が関与していると考えられている。食生活などの環境要因により、個々人の味覚は変化し、嗜好性が形成される。幼小児期の味覚がその後の食生活への影響、ひいては生活習慣病に繋がる可能性も考えられる。本研究の最終的な目標は、幼小児の味覚をターゲットとした味覚感度の客観的分析による味覚介入をすることから、生活習慣病を効率的に予防することである。本年度は、全身疾患のない子供（4-12歳）を対象に、電気味覚検査、全口腔法変法の滴下法を用いた四基本味の識別検査、サクソンテストを行った。同様の検査を自覚的味覚異常のない大人のデータを採取し、対象群とした。結果は電気味覚検査による閾値の平均は大人は子供の約3.5倍で、子どもの味覚感度は大人より高い傾向が観察された。それに反して、甘味の識別感度は大人が有意に子供より高かった。また有意差は見られなかったが、塩味、酸味の識別感度は、大人の方が子供よりも高い傾向が見られた。しかし、苦味については大人と子供の感度に違いはまったくなかった。サクソンテストにより唾液分泌量については大人と子供の違いはなかった。本年度得られたデータから、味細胞および味神経の感度は大人よりも子供の方が高い傾向があるが、苦味を除いた四基本味それぞれの味の識別は大人の方が感度が高い結果が得られた。子どもの甘味・塩味・酸味の識別は環境要因により変化する可能性が示唆された。特に甘味についてはその傾向が示唆された。ただし苦味については環境要因による影響はないことが示唆された。
