本研究は、認知症の人が食事に満足しているかどうかを「食べ方」の変化で評価することを目的とする。調査対象は介護施設の介護職員とし、食事介助の「食べ方」についてチェックリストを用いて確認してもらう。チェックリストは、特定の食べ物を食べないなどの「好き嫌い」、よく噛まずに飲み込む、口の中の食べ物をなかなか飲み込まないなどの「噛み方」、食べる意欲がない、口から食べ物を出すなどの「食べ方」、食べる時間が長いなどの「食べる時間」についてそれぞれ５段階で評価してもらい、同時に食事の状況、誰とどのようにして食べたかについても記録してもらう。同時に認知症に人の行動や精神心理的な状態については介護記録から情報を得る。解析にはテキストデータ分析のための解析ツールであるSPSS Text Analytics for Surveysを用い、テキストデータから可能な限り客観的な結果を導き出す。以上より得られた「食べ方」や食事の状況、認知症の人の状態、そしてその時のメニューから関係を明らかにし、食事に対する満足度を「食べ方」で評価できるか検証していく予定である。また、調査の過程で認知症の人との共食について、高齢になると一緒に食事をする人たちを不快にしないための食事マナーを守ることが難しくなるが、それを子どもや孫の世代は我慢しなくてはならないという社会的な制約があり、特に家族と同居している高齢者の共食は、家族の我慢で支えられている部分が少なくないことが明らかになり、今後、引き続き検討していく必要があると考える。これに関連して、高齢者の共食の問題点について山梨大学看護学会誌21巻1号(2022)に発表した。
