本研究は、国境を越えて広がっていく日本食の調査を通じて、グローバル文化に関する新たな理論的パースペクティブを得ようとするものである。既存のグローバル文化論は、元の文脈から切り離される文化の脱埋め込みに注目し、越境文化の現地化、ハイブリッド化を報告している。一方で現代の文化は伝統・真正性の名の下にナショナル・ローカルな価値づけが重視されている。これらは単なる普遍化でもその反動でもない、より錯綜した文化現象であり、この複雑な脱/再埋め込み過程を分析できる文化理論が求められている。グローバルに広がり変容し現地社会に適合しつつもルーツ社会に根差した文化とはいかなるものか、多文化に開かれつつも真正性を満たす文化はいかに構築されるのか。こういった社会学や文化に関する理論的な問題系を、海外の日本食の世界を手掛かりに実証的な社会調査にもとづいて探るのが本研究である。本研究では海外の日本食に関する文献のサーベイ調査と現地社会の飲食産業・日本食レストランに関するフィールドワーク調査を実施する。現地飲食店の参与観察、経営者や客へのインタビュー、ドキュメント分析から日本食の多民族化の過程を詳細に記述分析し、多文化に開放されつつルーツとつながる文化の恒常性を成立させる条件を考察し、グローバル文化の社会学理論の更新を目指している。2022年度は在外研究として欧州に滞在し現地調査に従事することができた、これまで収集してきた和食や日本食について収集してきた資料やデータを整理・分析し考察をおこなった。個別の研究実績としては、雑誌論文（単著）の刊行と学会発表を行うことができた。
