项目摘要

ガストロノミーを資源としたフードトレイルのマネジメントと創造性について明らかにすることを目的に、国内・国外の事例をもとにレストラン・マネジメントモデルを提案する研究を行わて来た。しかし、ここ数年間はコロナ禍のなか、研究が延期となっている。昨年度の実績としては、国際学会にて執筆中の最終研究論文の粗筋を発表した。発表では、欧米のフードトレイルと日本の「食の街道」事例を比較分析して示唆点を導き出し、海外のフードトレイルを踏まえ、ガストロノミーを資源とした日本型フードトレイルモデルの提案について報告した。研究最後年度であり、論文として研究をまとめて、国際学会で発表する予定である。さらに、新たなフードトレイル事例を探りながらフィールドサーベイを行う。
