食事や食品の安全に対する学習は家庭科の学習においては大切な領域である。食材の特性を知ること,そのよさを最大限にいかした食し方が大切であり,中学生段階においては,自らが食材を栽培することによって,食材の特性を把握することができると考えた。栽培学習とその活用によって得られる食生活を家庭科学習に計画的に設定した。1年生4クラス160人対象で「豆腐作り」を設定し,研究を進めた。(1)大豆栽培(2)大豆の栄養(栄養学習の一環として)と大豆の加工品(3)豆腐づくり(4)おからを使った調理実習(5)おからから考える食材・食事と環境についての学習が大まかな流れである。食生活の自立の視点から,特に安全・安心を自分たちで築いていく学習として進めた。また,学校研究として異校種間交流学習を行っていたので,2年生では,大豆を含めて食材や食事をめぐる今日的課題について深く考えさせた。調べ学習・グループ討議を行い,自分たちの考えをまとめた。「私が築く食の安全・安心」というテーマを掲げ,グループごとに高校生に発表する機会を持った。大豆栽培は葉っぱの虫食いを見ることや,豆腐作りに必要な量を収穫するには労を要することが確認できた。金沢大学が里山・里海プロジェクトで連携している農業法人から入手し,にがりも揚げ浜式による珠洲塩田村からのものを活用した。塩作りの体験学習は教師のみが行った。乾燥大豆の硬さや色が豆腐となる変化を全員が体験し,残滓とも言えるおからの活用は食材を100パーセント利用することの意義を(1)食材の保存・保管と入手における消費者として主体的行動ができる生徒の育成(2)加工残滓(おから等)を活用した調理を生徒に考えさせ,環境負荷をより小さくすることの工夫を感じ取ることができた。さらに低い食料自給率や継続的な食品確保についての課題意識を持つことができ,2年生の学習につなぐことができた。
