项目摘要

調理済み・半調理済み商品の利用について、1984,1990,1994年に、大阪・広島・山口で学生の家族の調理担当者にアンケート調査を実施した。その結果、調査した30品目を利用の変化から5つのグループに分類し、その特徴を明らかにした。第1のグループは、1984年から1994年の10年間で利用に変化のない食品で、持ち帰り食品のすし、冷凍食品のハンバーグ、インスタント食品のス-プの3種であった。第2のグループは、1984、1990、1994年と利用が増加している食品で、持ち帰り弁当、そう菜のだしまき卵、そう菜の酢の物・あえ物の3種であった。第3のグループは、年次で増減が認められるもので、9種中6種はそう菜であった。第4のグループは1984年から1990年にかけて増加が認められる食品で、8種中レトルト食品3種、持ち帰り2種で、その食品はハンバーグ、カレ-・フライドチキン、ス-プ・シチューと洋風の食品が多く見受けられた。第5のグループは、1990年から1994年にかけて利用が増加している食品で、7種中4種がそう菜、3種が冷凍で、今まで家庭で作るとされていたきんぴら、にしめ、焼き魚等和食の食品が多く見受けられた。現在、これらの食品の利用におよぼす生活概況・食生活概況等の因子について、また、食品のイメージと利用の関連についても解析中である。
