本研究は人々の認識や社会おける発酵という現象の位置づけ、原材料を育む生態環境との相互作用なども含め、地域に根付く発酵文化のありようについて、薬用酒を事例に、包括的に明らかにするものである。そして、自然環境と文化の連関について、発酵を通じて論じる。世界各地にある発酵を利用した土着技術は世界各地にあり、発酵という現象を通じて、生物文化多様性保全や包括的な視野を養う教育などに新たな視点を提供することを目指している。インドの薬用酒（Asava, Arishta）は、その製造法や効能についての自然科学研究はあるが、社会文化や生態環境という地域固有性も含めた包括的な研究が非常に少ない。インドでは、一般に酒類は不浄なものとされ、新鮮でない食品は非衛生的とされるにも関わらず、発酵された薬用酒は生活や文化に根差して重宝されている。インド国内の異なる３地域でフィールドワークを行い、発酵という現象が人々への解釈、熟成（発酵）させている理由、発酵プロセスと地域性の関係、地域独自の概念・価値などの社会的副産物および社会文化と自然環境との関係を明らかにする計画である。１年目の本年はホリスティックサイエンス分野の研究者に、研究指導を受け、議論を深めた。そして、フィージビリティ調査として１月にインドに42日間滞在し、南インド（ケーララ州、タミル・ナドゥー州）調査候補施設や民家を訪問し、聞き取りを行った。そのうえで、現況から調査手法や調査可能項目の見直しを行った。２年目については、特別研究員奨励費（研究内容は本研究とは異なる）が採用されたために辞退した。本研究については民間財団からの助成金を得ており、継続する予定である。
