日本酒、醤油などを製造する醸造技術は、日本国内において独自に発展をとげた代表的な技術のひとつである。これらの技術は元禄期に一定の水準に達し、江戸末期にはいくつかの重要な改良が行われ、今日の技術につながっている。本研究では、日本酒を中心として各地の博物館、製造業者などが所蔵する醸造技術関係の一次資料を調査して、資料の体系化を行うとともに、上記のような在来技術の発展過程を明らかにする。本年度は、伊丹から灘への発展を中心に資料調査を継続した。主要な成果は以下のようである。(1)灘の酒造業は享保期にはじまり、文化・文政期に江戸入律高が50%以上となって、伊丹にかわって圧倒的な地位を確立した。これを可能とした灘の技術的条件として、水車精米と寒造りへの集中化が従来から指摘されてきた。しかし、通説とは異なり、伊丹の酒造業も同時期に次のような変容をとげていた。(2)元米と掛米の区別、酒造好適米の選択的採用、踏精の踏み数の区分などは、伊丹酒造業の先導のもとに安永期から導入されていた。また、文化期には、伊丹でも水車精米がはじまっていた。さらに、文政期には、伊丹において「もと」の育成に暖気が導入され、健強な「もと」の育成が酒垂れの増加を可能とし、薄造りが普及していた。舟運による出荷も文政期に開始されていた。(3)伊丹における技術的改革が灘に追随した試みであるとはいえ、少なくない先導的役割にくわえて、多大な努力による諸成果が生み出されていた。それらにより、伊丹酒は、江戸における高い市場占有率を保持し、最高位の格付けを維持させたと評価することができる。
