The objective of this study was to conduct a research on food demand by utilizing sensory tests of food tastes. Consumers' demands for food are considered to be a mixture of their evaluations for each characteristics of the food under consideration. To capture the demand at brand levels, it is necessary to separate the effects to the evaluation of food by tastes and by other information such as labeling.I have conducted a research on consumers' evaluation on food using sensory tests. Combined with conjoint analyses, some significant differences were found in their evaluations of food among stages. And I also used a sensory test process in evaluation of new food product that may be of practical use for food processing companies.

本研究的目的是利用食物口味的感官测试来研究食物需求。消费者对食品的需求被认为是他们对所考虑的食品的每种特性的评价的混合。为了把握品牌层面的需求，有必要区分口味和标签等其他信息对食品评价的影响。笔者通过感官测试，对消费者对食品的评价进行了研究。结合联合分析，发现不同阶段对食物的评价存在显着差异。我还使用了感官测试过程来评估新的食品产品，这可能对食品加工公司有实际意义。
