第2回IUPAC-国際甘味物質討論会の開催準備として以下のような研究を行った。まず、研究分野別に厳選されたそれぞれの研究分担者が各人の分野の最新情報を収集して、本討論会の討論議題に相応しいテーマをもちより、会議によりメインテーマ、基調講演、分科会の種類などを選定した。その結果、メインテーマは「甘味料現状分析と将来への展望」と決定し、基調講演にはそれぞれの担当分野の研究分担者が複数の候補者の中から選定し、綿密な交渉を行った結果、次の演者を決定した。G.Birch(UK),M.Goodman(USA),S.Hamada(浜田茂幸),A.D.Kinghorn(USA),S.Kimura(木村修一),I.Kitagawa(北川勲),R.F.Margolskee(USA),J.L.Markley(USA),L.Merlini(Italy),T.Nakakuki(中久喜輝夫),D.E.Walters,(USA)また、以下の分科会とそれに伴うシンポジウム講演(括弧内は担当責任者)を行うことを決定した。味質の生理学及び分子生物学(二ノ宮),各種甘味物質及び関連物質の構造と機能(笠井),甘味活性-化学構造相関(山崎),甘味物質の探索・合成・生産及び変換(西沢),修飾甘味の栄養学(北畑),甘味料の安全性(義平),抗う蝕、生活習慣病における甘味料の機能性(二ノ宮),甘味料の評価と食品への応用(吉川),各国における許可と市場の状況と展望(大谷)。ついで、最近世界で行われた関連学会の情報を精力的に収集し、膨大な名簿を入手し、その出席者宛に本討論会の主旨と計画を伝え、参加を呼びかけ、討論分野に相応しい講演、演者の候補者を公募した。今後その結果によりプログラムを編成する予定である。

The 2nd IUPAC-International Symposium on Sweet Substances Select the latest information from each of the research groups, and select the topics for discussion at the conference. The results of the study are determined by the status quo analysis and future prospects of the sweet taste. The keynote speech is conducted by the study participants. Physiology and molecular biology of taste (2nd palace), structure and function of various sweet substances and related substances (Kasai), activity of sweet substances-chemical structure correlation (Yamazaki), exploration, synthesis, production and transformation of sweet substances (Nishizawa), nutrition of modified sweet taste (Kitaba), safety of sweet taste (Yoshihira), function of sweet taste (2nd palace), evaluation of sweet taste and food use (Yoshikawa), Permits and market conditions by country (Otani). Information gathering, name book expansion, attendees, theme and plan of the seminar, discussion, presentation, candidate recruitment, etc. In the future, the results will be compiled into predetermined ones.
