Comparative study on the dietary intake of children in Asian countries of Japan, China and Korea were carried at the kindergartens by the food duplicate method from 2003 to 2005 in special reference to trace element of cadmium and lead, representatively as well known environmental pollutants.The 24-hr food duplicate samples were collected from 296 children aged 4 to 6 years of both of boy and girl belonging to 15 kindergartens in Miyagi prefecture in Japan, 359 children of 11 kindergartens in China and 113 children of 4 kindergartens in Korea. In addition to the food duplicate samples, the spot urine and the hair samples were collected from the children in China and Korea in order to make analysis of trace elements. The anthropometric examinations of height and body weight and the questionnaire study on the life style and food habits were worked for all of the children.Nutritional analysis of the duplicate food samples were conducted utilizing the national standard food composition tables for each other. The samples were digested by heating in the presence of mineralacids, and the digests were subjected to analysis for the minerals and trace elements.The measurements of dietary of calcium, magnesium, phosphorus, sodium, potassium, chloride, and the trace elements of iron, zinc, copper, manganese, cadmium, lead and et al. were followed by atomicabsorption and emission spectrometer, and ICP-MS.
采用食物复制法对日本宫城县15所幼儿园296名4~6岁男女幼儿、中国幼儿园11所幼儿园359名幼儿和韩国4所幼儿园113名4~6岁儿童进行食物复制法对比研究。除食物重复样本外,还采集了中国和韩国儿童的现场尿样和头发样本,以进行微量元素分析。对所有儿童进行身高、体重的人体测量和生活方式、饮食习惯的问卷调查,采用国家标准食物组成表对重复食物样本进行营养分析。样品在无机酸存在下加热消化,进行矿物质和微量元素分析。测定膳食中钙、镁、磷、钠、钾、氯化物和铁、锌、铜、锰、镉、铅等微量元素。用原子吸收发射光谱仪和电感耦合等离子体质谱(ICP-MS)检测。
