项目摘要

サプリメントの利用に関する栄養教育プログラム構築を目的として、15〜17年度にかけてサプリメントの利用と価値観、摂取栄養量との関係を把握した結果、サプリメント利用の要因は体調不良と食生活の自己評価の低さであり、食生活の自己評価の低さにはファッション、栄養、健康情報などが連動していた。一方、陰膳方式による食事試料の分析、食事記録の解析からは、サプリメント利用者の食生活が非利用者の食生活より評価できないとはいえず、自らの食事内容を正しく評価できていないことが示された。これらの結果をうけて、17年度はさらにサプリメントを利用している女子大学生18名を対象に栄養教育介入試験を行った。まず、サプリメントによる栄養素の補給が必要であるか否か、あるいはどの程度必要であるかの問いかけを行った。次いで「栄養成分の知識」あるいは「価値観」とサプリメントの利用行動との関係を対象者自身が分析し、その後3ヶ月間、目標達成確認を行った。その結果、対象者の「栄養成分の知識」の向上は、サプリメントの利用を中止するのではなく、適正利用の方向へ意識づけるものであった。しかしながら、様々な要因により不規則な生活を余儀なくされた場合にはサプリメントに依存する方向となった。一方、「食事、生活習慣に対する価値観」への介入は、多くの対象者が「食事内容とサプリメントの利用は関連していない」と捉えているために関連づけるための期間(より多い介入回数)が必要となるものの、食事そのものを重視することとなり、過度な利用につながらなかった。これらのことから、今後の栄養教育にあたっては、「栄養成分の知識」のみではなく、「価値観」を含めた指導が重要であると考えられた。なお、サプリメント利用者は家族との精神的つながりを強く意識していることから、家族を巻き込んだ栄養教育が効果的であるといえた。
