健全な食生活を実践するためには健全な食生活を実践し、健全な味覚を形成する必要がある。味噌汁ダシにおいては、簡便な市販ダシを利用する家庭の増加が予想されるが、天然ダシと市販ダシの味覚形成に及ぼす効果や影響については、十分に明らかにされていない。健全な味覚の発達を目指して和風ダシを用いた味覚教育を行うため、平成18年度は山口県、岡山県、愛知県において、以下の調査研究を行った。1)ダシ汁の官能評価と味覚教育の実践山口県では、高校2校、一般人を対象として煮干しダシの嗜好調査と味覚についての講義を行った。岡山県では、T市K小学校1校とその保護者を対象として、煮干しダシと顆粒ダシの嗜好調査を行うと同時に、家庭におけるダシ汁の利用状況を調査した。研究成果は職員研修会(保護者については文書)で報告し、味覚教育プログラムを実践した。愛知県では、N市の小学校1校およびK市の学童保育2施設の児童および保護者を対象として、かっおダシと顆粒ダシの嗜好調査を実施した。2)天然ダシと市販ダシの成分分析愛知県の調査で用いたかつおダシと顆粒ダシに含まれる遊離アミノ酸、核酸関連物質について分析を行い、成分について比較検討を行った。3)成果発表平成17年度の成果は、日本栄養改善学会・中国支部学術総会総会(2006年7月、島根)、栄養改善若手の会(2006年12月、愛知)で報告した。平成18年度の成果から、天然ダシは健全な味覚の発達に効果的である可能性が示唆されたため、これらの成果を学会誌で発表するべく投稿準備中である。

Comparison of the composition of natural substances in Aichi Prefecture. 3)The results of the 17th year of Heisei were reported to the Japan Society for Health Improvement, China Branch Academic Conference (Shimane, July 2006), and the Health Improvement Wakata Conference (Aichi, December 2006). The results of Heisei 18 are in preparation for submission due to the possibility of achieving results from natural and healthy research.
