项目摘要

今年度の実施結果1.調査準備石川県A市に住む日系ブラジル人労働者の栄養調査を行う予定であったが、予定していた事業者の協力が得られにくくなり実施が遅れた。しかし、地域に住む日系ブラジル人のコミュニティを中心に、調査を開始しプレ調査まで行うことが出来た。2.プレ調査の実施結果(1)24時間思い出し法50代の男性1名に調査を行い、エクセル栄養君にて分析を行った。ブラジル特有の食品項目については代用できるものは日本の食品成分表を用い、そうでないものはブラジルの食品成分表を用いた。問題として先行研究より日系ブラジル人労働者の血圧が日本人労働者よりも高いことが明らかとなっているが、食事中の調味料などからくる塩分所要量が日本人の標準使用量と異なることもあり、うまく調査できないことがあげられた。また、日系人労働者は、社員食堂で食事を取ることが多く、食堂メニューの所要量を知るために企業の協力を得る必要性が明らかとなった。(2)面接調査結果上記の1名のみであるが、24時間思い出し法の中で聴取した食事内容となった理由を中心に面接調査をおこなった。今回の24時間思い出し法は1日のみの調査ではあるが、面接調査を併用することで、食事行動の中で何が大切とされているか、調査日の食事は普段の状況を反映しているのかを推測することができた。1名の分析からは、対象者はダイエットを希望しカロリーを減らすことを心がけてはいるが、方法は栄養のあるものを取り、その摂取量を減らすというものであった。(4)今後の計画予定数の調査を行うことは出来なかったが、栄養学分野の研究を行っている研究者の助言を得ることが出来、24時間思い出し法の精度を上げ、食物摂取頻度調査票の開発を目標として、調査を遂行していく予定である。
