项目摘要

米および卵白中の抗原タンパク質の消化性および腸管吸収性について、マウスを用いて検討した。その結果、抗原タンパク質は十分に消化されず、未分解のまま小腸の吸収部位に達し、未分解物が選択的に血中へ移行していた。さらに抗原タンパク質を経口投与後の抗体応答を解析した結果、血中の滞留期間が長かったタンパク質で抗体応答が見られ、抗原タンパク質の消化、吸収性と免疫応答との間には関連性があることが明らかとなった。

The digestibility and intestinal absorption of the antigen in rice and protein are closely related to its use. As a result, the antigen was digested, undecomposed and absorbed in the small intestine, and undecomposed substances migrated into the blood. The results show that there is a long retention period in the blood and the antibody response is related to the digestion, absorption and immune response of the antigen.
