本年度は、コロナ禍で生じた食料需給の変化について、外食・中食需要の減少や観光業の不振による高級食材や加工品の需要減を中心に、その概要を検討した。代表者の川久保は、主要な果樹加工品の１つであるワインについてコロナ禍での需要変化とワイナリーの対応について検討した。その結果、外食・観光需要の減少によってコロナ禍初年度は販売減と在庫増が見られたが、通信販売を強化した結果、現在ではコロナ禍前と同水準に戻ったことが明らかになった。これは統計的にも把握でき、山梨・長野・北海道など新興ワイナリーの多い地方では、2021年度より醸造量が回復し、ワイナリーの創業も再び活発化している。分担者の淡野は、高級畜産物の１つである和牛を中心に、コロナ禍がその流通・消費形態に及ぼした影響や変化について、専門誌などの文献調査を行った。コロナ禍当初は、現場は大きく混乱し、外出自粛や海外観光客の大幅減による外食需要の減少が発生したが、コロナ禍が長引く中で、内食向けの通信販売の増加など、新たな供給形態の展開もみられるようになった。佐々木は、主食である米の需要変化と流通面について検討した。コロナ禍で米の需要が減少した結果、流通面では農協による系統販売が減少し、農協の直販や生産者の直販が拡大した。一方、需要減は米価の下落に繋がったものの、銘柄間での価格の幅が大きいことも特徴的であった。深瀬は、山形県天童市・東根市・寒河江市におけるコロナ禍での果樹生産と観光果樹園の動向について、山形県立図書館や各市立図書館、市役所などで資料収集を実施した。塚本は、各種統計や業界誌などから、コロナ禍におけるウナギ産業の動向を加工品消費と専門店飲食に分けて観察した。その結果、加工品消費は巣ごもり需要により、むしろ活性化したこと、専門店飲食は制限や自粛により沈滞し、消費地の活鰻流通量は明らかに落ち込んだことが明らかになった。
