The primary hypothesis of this study is to determine if use of a self-administered questionnaire predictive of adherence to a gluten free diet can be developed with good validity and reliability compared to trained clinician interview. It is hypothesized that neuroticism, as measured by the NEO PI-R will correlate positively with gluten-free diet compliance, as measured by self-report of level of compliance, nutritionist evaluation, and serologic testing, in adults with celiac disease. Also, it is hypothesized that altruism, as measured by NEO PI-R, will correlate negatively with gluten-free diet compliance, as measured by the same measures.
