The brewing industry is a global business, consisting of several dominant multinational companies and many small scale producers. During beer production, there are three main chemical and biochemical reactions, such as mashing, boiling, fermentation and maturation and three solid liquid separations, such as wort separation, wort clarification and rough beer clarification. The solid-liquid separation step is the most challenging step requiring use of flocculants and no compromise on the taste and odor of beer. The proposed research project deals with the specific problem of the company, La Barberie who face a problem related to the sedimentation of beer (longer duration and inefficient process) after fermentation while using bentonite as a conventional flocculant. In this perspective, the proposal aims at utilization of different biodegradable flocculants, such as chitosan, alginate, among others and optimization of the process at laboratory scale and later to integrate with the company process. The successful accomplishment of the stated objectives of the proposed project match with the priorities of La Barberie and it will help the company develop an optimal and integrated flocculation process resulting in high quality beer.
