In collaboration with a craft brewery, Sleeping Giant Brewing Co (located in Thunder Bay, Ontario) we will initiate the development of a new type of beer with prebiotic (health benefiting) properties and improved sensory qualities (foam stability and palatability). Fructans, in particular inulin, are known to modify sweetness, stimulate the digestive process, and stabilize foams formed in their presence. Beer quality following the addition of inulin will be determined. Additions of sterile, as well as raw inulin will be followed microbiologically and by the detection of gaseous by-products characteristic of spoiled beer. The regulatory environment regarding food additives and prebiotic beer marketability will be explored.
