The current proposal intends to study clean label alternatives for the control of Listeria monocytogenes in a fishproduct, smoked salmon jerky. The Listeria presence in recent smoked salmon recalls in Canada led WolfheadSmokers to investigate natural alternatives to control Listeria. The company smokes farm-raised Atlanticsalmon, which is harvested from the cold, pristine waters of the Bay of Fundy; and is shipped across NorthAmerica and around the world.
