As beer is the most popular alcoholic beverage in Canada and likely the major source of natural antioxidants,the investigation of these endogenous nutrients and antioxidants from various beers and their hops could bringCanadian beer forward as an internationally-competitive product with market advantage. The Canadian MaltingBarley Technical Centre (CMBTC) evaluate the quality of Canadian malting barley in the malting and brewingprocesses, simulating commercial scale production, delivering solutions to malt and brewing industries. To becompetitive, the relatively smaller Canadian-owned brewers and maltsters must come up with innovativeproducts or consistently enhance and highlight the values of their existing products. The present project aims toprovide detailed quantitative antioxidant profile information and activities of beers produced by the CMBTC incomparison with commercial national brands, providing the company with vital tools for competitiveadvantage, value addition, and product development and innovation. Using the knowledge generated from thisproject, the CMBTC will be able to help brewers develop new beer products; and obtain additional value fromthe spent grain, which is currently sold as animal feed that sells for a very low profit margin, by producinghealth benefits products from it. The expertise for analysis of phenolic compounds will be provided by Dr.Usha Thiyam-Hollander at the University of Manitoba.
