Oakridge Manufacturing and Distribution (OMD), located in Whitby Ontario, is a producer of ketogenic baking mixtures under the brand name Hold the Carbs. The rapidly growing company, which was started in 2017, currently produces 14 different ketogenic baking mixtures which are gluten free, some of which contain high protein profiles. The company is in need of a systematic investigation of the shelf stability of their products and has partnered with the research team at Conestoga College's Institute for Food Processing Technology (IFPT) in this regard. The IFPT will conduct experiments to evaluate the shelf life of seven major product lines. By analyzing the ingredients and final products for their susceptibility to chemical and microbial deterioration during storage, OMD will be able to bring their products into the market with accurate best before dates and obtain Safe Quality Food (SQF) and Safe Food for Canadians Regulations (SFCR) certifications for their products. The IFPT will benefit through training HQPs that can meet the current needs of the Canadian food industry.
