Health Canada recently released a ¿Notice of Proposal¿ to ban trans fats from the food supply, while also adding ¿warning¿ symbols on foods high in saturated fats. This has caused a flurry of activity in the food industry, which now needs to reformulate thousands of products to the new standard. This program will focus on the functional replacement of trans and saturated fat with lower calorie mimetics such as structured emulsions, oleogels, food-grade fiber microparticles and nanoengineered fats. The new structures will be optimized for both eating quality and physiological response, particularly serum triglycerides (lipidemic index) and glucose (glycemic index).
