随着我国贸易和消费需求的急剧扩大,带来了食品多样化的改变和贸易多元化的发展,使得食品真实性呈现更为隐性化的变化趋势,从原先的质量、安全保证演变为涉及质量、安全、造假和防御四个方面。因此建立灵敏、适用性强、操作简单的真伪鉴别快速检测技术成为目前重要而且急迫的任务。本项目通过使用双拖尾多重重组聚合酶恒温扩增技术与核酸杂交试纸条建立针对高值肉类及其制品真实性快检技术。合成不同颜色的金属纳米粒子、在金属纳米粒子的表面标记拉曼信号分子和核酸探针,形成彩色试纸条标记物,达到试纸条上一种颜色对应一种掺假物,即“一色一物”;结合手持拉曼光谱仪检测试纸条检测线上拉曼信号的强度达到对掺假物的可视化定量检测。本项目的实施,力求为高值肉类真伪鉴别提供方法依据,进而扼制或降低高值肉类掺假事件的发生,对我国实施食品安全战略、确保人民群众舌尖上的安全、推动食品产业健康发展具有重要意义。

With the rapid expansion of China's trade and consumer demand, the change of food diversification and the development of trade diversification have resulted in a more subtle trend of food authenticity, from the original quality and safety assurance to quality, safety, counterfeiting and defense.Therefore, it has become an important and urgent task to establish a quick detection technology for identification with high sensitivity, strong applicability and simple operation. In this project, the fast detection technology for authenticity of high-value meat and its products was established by using double-tailed multiple recombinant polymerase constant temperature amplification technology and nucleic acid hybridization strips.The metal nanoparticles of different colors will be synthesized, and the surface of the metal nanoparticles is marked with Raman signal molecules and nucleic acid probes. As markers of the strip, the result can be interpreted by the color development of the strip, so that one color on the strip corresponds to one adulterant, that is, "one color one substance".The strength of the Raman signal on the detection line can be achieved by handheld Raman spectrometer.The implementation of this project strives to provide a method basis for the identification of the authenticity of high-value meat, and then to control or reduce the occurrence of adulteration of high-value meat, which is of great significance to the implementation of China's food safety strategy, to ensure the safety of people's tongue, and to promote the healthy development of the food industry.
